Roasted potatoes

Simple and delicious pan-roasted potatoes with onions. They are soft, with a golden crust on the outside and infused with fragrant roasted onions. Use them as a side dish next to any (protein-rich) main.

Ingredients

Servings: 9
  • 2 kg
    potatoes
  • 200 g
    onions chopped
  • 120 g
    olive oil
  • 2 tbsp
    fresh parsley chopped
  • To taste
    salt & pepper

Instructions

  1. Cook the potatoes in plenty of salted water until just soft, about 15 minutes. Let cool.

  2. Once cool, cut the cooked potatoes into slices, about 0,5 cm thick.

  3. Using a frying pan, fry the potato slices in the olive oil until they start to get a bit of color.

  4. Then add the onion cubes and fry together with the potatoes until everything has a nice golden-brown color.

  5. Season with salt and fresh ground pepper and serve with fresh parsley on top.

Notes

They fit well with a tangy brown gravy and roasted vegetables.
