Sandwich with chick’n salad and colorful cabbage mix

This delicious sandwich with chick'n salad takes a little more time to make, but it is well worth it! Short on time? Then make the sandwich with a readymade spread of your choice!

Ingredients

Servings: 4

For the chick'n spread

  • 160 g
    vegan chicken pieces
  • 1 tsp
    chicken spice mix
  • 5-7 tbsp
    (plant-based) mayonnaise

For the pointed cabbage remoulade

  • 100 g
    pointed cabbage (red or white or mixed) finely chopped
  • 1
    carrot grated
  • 1
    small apple in small cubes
  • 2
    gherkins sweet and sour, diced
  • 10 g
    parsley finely chopped
  • 2 tbsp
    mustard
  • 1/2
    lemon the juice

For the garnish

  • 250 g
    cherry tomatoes halved
  • 75 g
    mixed salad leaves
  • 1/4
    cucumber in slices

Instructions

  1. Fry the chicken pieces in a little sunflower oil until golden, and season with the spice mix. Let cool and finely chop the larger pieces.

  2. Mix the chicken pieces with the mayonnaise.

  3. Mix all the ingredients for the pointed cabbage remoulade.

  4. Top the rolls first with the spread, then with the pointed cabbage salad, cherry tomatoes, cucumber and lettuce.
