Tofu bites

I created these when I wanted a fun, practical way to eat scrambled tofu. I’ve shared them at picnics and birthdays, and they’ve become a way for me to express care for my friends.

Ingredients

  • 500 g
    tofu
  • 30 g
    oat flour or any flour or cooked grain, such as quinoa
  • 20 g
    nutritional yeast
  • 1 tsp
    salt
  • 2 tsp
    turmeric
  • ¼ tsp
    cayenne pepper
  • Fresh or dried herbs (parsley, oregano, or thyme)

Instructions

  1. Mash the tofu with your hands until it forms a smooth paste.
  2. Add the flour, nutritional yeast, and all spices/herbs. Mix thoroughly by hand.
  3. Roll the mixture into small bite-sized balls.
  4. Air-fry at 180°C (350°F) for 20 minutes. For extra crispiness, leave them in for 30 minutes!
