Pasta salad with sun-dried tomato and artichoke

This pasta salad looks really colorful thanks to the different veggies and tastes delicious too! Always a favorite on warmer days and lovely at a picnic or BBQ. Handy to make in advance as well: the next day it tastes even better!

Ingredients

Servings: 4
  • 250 g
    dried pasta (e.g. fusilli)
  • 400 g
    cannellini beans 1 can, drained and rinsed
  • 2
    red bell pepper's in thin strips
  • 100 g
    olives halved
  • 400 g
    cherry tomatoes in quarters
  • 150 g
    (marinated) artichoke hearts from a jar, cut into pieces
  • 8
    pieces of sun-dried tomatoes in strips
  • 150 g
    rocket
  • pepper and salt to taste

For the dressing

  • 1
    red onion finely chopped
  • 1/2
    lemon the juice
  • 4 tbsp
    oil from the sun-dried tomatoes
  • 2 cloves
    garlic finely chopped
  • 15 g
    fresh basil finely chopped

Instructions

  1. Cook the pasta according to the packaging. Drain it and rinse with cold water.

  2. Mix the ingredients for the dressing in a small bowl.

  3. Mix the pasta with the cannellini beans, pepper, tomatoes, artichoke hearts, sun-dried tomato and the dressing. Mix well and season with salt and pepper. Add the rocket at the last moment, just before serving.

Notes

Tip: as soon as you have drained the pasta, rinse it with cold water. This stops the pasta from sticking together and cools it down quickly!
