Vegan lentil balls

Lentils are incredibly versatile, and this meat-free version of meatballs will quickly become your new favorite comfort food.

Ingredients

  • 1 ½ cups
    cooked lentils brown, green, or black
  • 1
    onion diced and caramelized
  • 3 tbsp
    wheat flour
  • Vegan cheese for stuffing
  • Garlic powder & dried oregano to taste
  • 1 pinch
    salt

Instructions

  1. In a large bowl, mash the cooked lentils thoroughly.
  2. Mix in the caramelized onion, oregano, salt, garlic powder, and flour until well combined.
  3. With damp hands, form the mixture into balls. Press a small piece of vegan cheese into the center of each ball and seal it.
  4. Place on a baking tray and bake at 200°C (392°F) for 30 minutes until firm and golden.
