Cheesy white bean spread

This cheesy white bean paste is quick and easy to prepare. It has a rich and creamy texture, a spicy Mediterranean flavour, and can be served as a dip or a spread on bread or crackers.

Ingredients

Servings: 6
  • 400 g
    white beans cooked
  • 3 tbsp
    nutritional yeast
  • ½ tsp
    salt
  • tsp
    turmeric powder
  • 2 tsp
    dried oregano
  • 1 tsp
    dried basil
  • 2 tbsp
    olive oil
  • 1 clove
    garlic or ¼ tsp garlic powder
  • ½
    lemon juiced
  • 20
    green olives pitted
  • 10
    pickled green pepperonis seeds removed
  • To taste
    paprika powder

Instructions

  1. Put the beans in a food processor and blend until they have the consistency of a spread.

    Continue blending and add the nutritional yeast, salt, spices, along with the rest of the ingredients, one after the other.

  2. If needed, add some of the pepperoni brine to help blend the mixture into a smooth, creamy spread. Adjust salt to taste.

  3. Serve with veggie sticks, crackers, breadsticks, or spread on bread for a delicious snack.

Notes

For a milder spread, simply reduce or substitute the pepperonis with more olives.
