Avocado and spinach pasta

This green pasta is easy to make and wonderfully creamy thanks to the avocado, which also contains healthy fats. It is actually a healthy take on pasta with pesto!

Ingredients

Servings: 4
  • 300 gram
    wholemeal pasta
  • 450 gram
    spinach fresh, sliced
  • 3
    avocado ripe
  • 1
    lime
  • 2 tbsp
    basil fresh, sliced
  • 3
    garlic cloves
  • 0,5
    jalapeño
  • 1 tsp
    salt
  • 1 tbsp
    (plant-based) Parmesan cheese or nutritional yeast flakes optional

Instructions

  1. Cook the pasta until tender-crisp in 8-10 minutes. Drain and reserve 1 cup of the cooking water.
  2. Peel the skin off the avocados and put them in the food processor.
  3. Grate the lime and put the zest together with basil, juice of the lime, garlic, jalapeño, half of the spinach and salt and olive oil in the food processor.

  4. Puree into a smooth sauce, and add the remaining spinach bit by bit and the reserved cooking water until the sauce has the thickness you desire.

  5. Tip: nice with walnuts or sun-dried tomatoes through it.

Notes

Tip: to make this meal complete, add another healthy protein source, think pulses, (smoked) tofu, soy pieces or a healthy meat substitute.
