Minestrone soup

Minestrone is a nutritious Italian hearty soup. The soup contains pasta, beans and various vegetables, which makes it a filling soup that you could eat as a meal. The recipe is flexible; you can add vegetables, pasta and beans of your choice. That is why it is suitable for all seasons and handy for using up ingredients too! It's also a great soup to make large batches of.

Ingredients

  • 2 tbsp
    oil
  • 1
    onion finely diced
  • 2
    garlic cloves finely chopped
  • 400 g
    tomatoes diced, from a can
  • 1
    carrot
  • 1500 ml
    vegetable stock
  • 4 tbsp
    tomato purée
  • 1
    bay leaf
  • 100 g
    wholemeal pasta pasta type of your choice
  • 1
    courgette in half slices
  • 1
    bell pepper diced
  • 400 g
    cannellini beans, butter beans or other beans of your choice canned, drained and rinsed
  • 3 tsp
    dried Italian herbs
  • pepper and salt to taste
  • plant-based Parmesan cheese optional, following this recipe
  • plant-based pesto optional

Instructions

  1. Heat the olive oil in a soup pan and fry the onion over low heat for 10 minutes. Then add the garlic and fry for 1 minute. Add the diced tomatoes and let it cook gently for 5 minutes. Then add the winter carrot, stock, Italian herbs, tomato puree and bay leaf and let it cook for 10 minutes, until the carrot is soft.

  2. Add pasta, courgette and pepper. Stir regularly to prevent the pasta from sticking to the bottom of the pan. Let the soup simmer until the pasta is done, in about 8 minutes.

  3. Season with pepper and salt and remove the bay leaf before serving. Serve it with some Parmesan cheese and pesto if desired!
