Ingredients

For the salad

  • 100 g
    flat rice noodles cooked according to instructions
  • 1
    red bell pepper cut into strips
  • 1
    carrot cut into strips
  • purple cabbage
  • 1
    lime
  • other vegetables as preferred

For the sauce

  • 2 cloves
    of garlic minced
  • 1 tbsp
    of sesame oil
  • 1 tbsp
    tamari or soy sauce
  • 3 tbsp
    brown sugar or agave syrup
  • 2 tbsp
    rice vinegar
  • 1 tbsp
    sriracha hot sauce or less
  • 2 tbsp
    peanut butter

For the topping

  • 20 g
    crushed peanuts
  • 2
    scallions
  • fresh cilantro

Instructions

For the sauce

  1. Combine all the ingredients in a small bowl and mix well. Set aside.

For the salad

  1. Prepare the rice noodles according to the package instructions.
  2. Combine all the vegetables in a large bowl.
  3. Add the sauce and mix well.
  4. Garnish with scallions, peanuts, and cilantro.
