Chocolate Chip Cookies

Delicious cookies that are not difficult to make at all. These vegan chocolate chip cookies are a must-try!

Ingredients

Servings: 25
  • 100 g
    dark chocolate
  • 70 g
    sugar
  • 140 g
    flour
  • 3 tsp
    baking powder
  • salt
  • 75 ml
    liquid margarine
  • 1 tbsp
    soy milk

Instructions

  1. Preheat the oven to 175°C. Line a baking tray with baking paper.
  2. Chop the chocolate into coarse pieces. Put the chocolate, soft brown sugar, flour, baking powder and a pinch of salt in a mixing bowl and mix this together. Add the margarine and the soy milk.

  3. Knead this through the dry ingredients, until the dough is just cohesive, and does not stick. Form small balls and press these flat on the lined baking tray.

  4. Bake the biscuits in about 15 minutes (for smaller biscuits) to 20 minutes (for large biscuits) until they are lightly golden brown and just firm. Let the biscuits cool well and harden.

Notes

Tip: Try adding dried cranberries or hazelnuts too! Or add 2 tbsp cocoa powder to the dough and use plant-based white chocolate (available at health food shops or Jumbo).

Instead of liquid margarine you can also use plant-based margarine.
