Fresh spring rolls with tofu and red cabbage
Fresh spring rolls are packed with vegetables and beautiful to look at. If you put all the ingredients on the table and let your dinner guests stuff and roll them themselves, they are also super quick (and fun) to make. With this dish you can vary endlessly with the ingredients you use and your dinner guests can pick their preferred ingredients.

Ingredients

1 nest(brown) rice noodles

6-8(brown) rice paper sheets

½avocado in thin slices

½cucumber in strips

60 gbaby spinach

140 gcarrot grated or julienned

160 gsmoked tofu in strips

100 gred cabbage finely chopped

1bell pepper in strips

100 gbean sprouts

20 gfresh coriander or mint finely chopped
For the dip
-
2 tbspsoy sauce use tamari for a gluten-free option

1 tspsesame oil

1 tbsplime juice
Instructions

Prepare the rice noodles according to the packaging instructions. Then set them aside in a dish, drizzle a little sesame oil over them and mix it through, so that the noodles do not stick together.

Put down a large bowl and fill it with warm water. Take a rice paper and place it in the bowl. Let it soak for about 10-15 seconds, until the paper has become soft. Take it out carefully with two hands and let it drain briefly.

Lay the softened rice paper carefully on a clean surface, such as a chopping board or plate. Place a small amount of the avocado, cucumber, spinach, carrot, red cabbage, pepper, beansprouts and smoked tofu, coriander or mint, and a little of the rice noodles in the middle of the rice paper.

Fold the bottom of the rice paper over the filling. Then fold the sides inwards and roll the rice paper up tightly into a neat roll. Make sure the roll is packed firmly, but not too tightly so that the paper does not tear. Repeat this process with the remaining rice papers and filling until you have several spring rolls.

For the dipping sauce, mix the tamari, sesame oil and lime juice in a small bowl. Taste the sauce and adjust with extra lime juice for more freshness or sesame oil for a nutty flavor if desired.
