Classic panzanella

Panzanella is a classic Italian bread salad with crunchy bread, tomato and basil. It is best to make this salad with stale bread, so it is perfect for when you have stale bread at home!

Ingredients

Servings: 2
  • 1/2
    wholemeal baguette or ciabatta stale, cut into rough pieces
  • 400 g
    tomato chopped
  • 15 g
    basil finely chopped
  • 2 tbsp
    olive oil

For the vinaigrette

  • 1
    shallot finely chopped
  • 1 clove
    garlic finely chopped
  • 4 tbsp
    extra virgin olive oil
  • 1
    lemon the juice
  • 1 tsp
    mustard

Instructions

  1. Preheat the oven to 180 degrees. Spread the pieces of bread on a baking tray and drizzle the olive oil over them. Toss well and bake the bread for 15 minutes. Then let cool completely.

  2. Put the chopped tomatoes in a sieve, over a bowl, and add a generous amount of salt. Toss and leave this for at least 15 minutes.

  3. Add all the ingredients for the vinaigrette to the juice that has leaked from the tomatoes and whisk well until it has become a nice vinaigrette.

  4. Put the bread, the basil and tomatoes in a large bowl and mix well. Let it rest for 20-30 minutes before you serve it so that the flavors can soak into the bread well.

Tip: Fancy a more filling salad? Then serve this salad with butter beans and cucumber!
