Ramen noodle soup with mushrooms and miso
There are all kinds of variations on ramen noodle soup in Japanese cuisine: from shio to tonkotsu. Miso ramen is a real classic ramen that is often naturally plant-based. Very flavourful, because of the miso paste that is added to it. You have to try this miso ramen with mushrooms!

Ingredients
For the stock

500 mlmushroom stock

6dried shiitake mushrooms optional

2 clovesgarlic finely chopped

1onion finely chopped

2 cmginger finely chopped

2 tbspsoy sauce

pinchpepper
Toppings

150 gramen noodles
-
150 gmixed mushrooms
-
1small pak choi
-
3 tbspmiso paste
-
200 gedamame
-
1spring onion cut into thin rings
Instructions

Put dried shiitake in boiling water, and leave them for about 5 minutes.

Heat some oil in a large cooking pan and fry the onion, garlic and ginger in it for 5-6 minutes or until they start to smell. Then add the mushroom stock, soy sauce and pepper.

Cut the shiitake into thin strips. Add them to the pan with the stock and let this cook gently for at least 30 minutes. Meanwhile, continue with the rest of the recipe.

Heat some oil in a sauté pan and fry the mushrooms in it until they have turned nicely golden brown. Season with salt.

Cut the pak choi into 4 pieces, lengthwise. Heat some oil in a frying pan and fry the pak choi pieces in it briefly, so that they stay nice and crispy.

Prepare the ramen noodles according to the instructions on the packaging

You can now strain the stock and discard the flavorings, now that the flavor has been drawn out of them, but you can also simply eat them if you find it a waste. When the stock is ready, mix in the miso paste. To dissolve it properly you can put the miso in a small sieve and mix it in with a spoon.

Distribute the noodles, mushrooms, pak choi and edamame over the bowls and sprinkle some spring onion over them. Pour the stock over the bowls and serve immediately.
Notes
Tip: You can find dried shiitake at the Asian supermarket. Can’t find dried shiitake or just want to go to the supermarket? Then you can also leave it out and add some extra mushroom stock.
