Gnocchi with tomato sauce and roasted vegetables

Gnocchi is a delicious type of pasta made with potato. It goes really well with this tomato sauce recipe with aubergine, courgette and lima beans. As well as being tasty, this pasta sauce is also very healthy! Buon appetito!

Ingredients

  • 1
    onion finely diced
  • 4
    garlic cloves in thin slices
  • 1000 g
    gnocchi
  • 1
    aubergine in small cubes
  • 1
    courgette diced
  • 800 g
    diced tomatoes from a can
  • Italian herbs fresh (15 g), or 1 tbsp dried
  • 400 g
    butter beans or lima beans from a can, drained and rinsed
  • 15 g
    fresh basil finely chopped
  • (plant-based) Parmesan cheese (optional)

Instructions

  1. Cook the gnocchi in a pan of hot water according to the instructions on the packaging.

  2. Heat a large splash of oil in a large pan with a thick bottom and sauté the onion in it for a few minutes, until it becomes translucent. Then add the garlic, Italian herbs, courgette and aubergine and let it fry for 2-3 minutes. Then add the tomatoes, stir well and let it simmer for 15-20 minutes with the lid on. In the last 5 minutes add the beans and gnocchi and stir well. Taste and season with salt and pepper.

  3. Sprinkle with the basil and the Parmesan cheese.

Notes

Tip: instead of gnocchi you can also serve this sauce with pasta, such as fusilli.
