Overnight oats with carrots

Overnight oats is a type of oatmeal that you leave in the fridge to soak overnight, so that in the morning your breakfast is ready straight away. This version is delicious and tastes like a healthy carrot cake!

Ingredients

Servings: 1
  • 250 ml
    soy drink
  • 40 g
    rolled oats
  • 10 g
    peanut butter
  • 1
    carrot
  • 1 tbsp
    chia seeds
  • 1 tbsp
    flaxseed
  • 10 g
    almonds
  • 10 g
    pumpkin seeds
  • 1 tsp
    cinnamon

Instructions

  1. Grate the carrot finely

  2. In a bowl or sealable jar mix the oats, soy drink, chia seeds, flaxseed, peanut butter, cinnamon and the grated carrot. Mix well until combined.

  3. Put the mixture in the fridge overnight (or for at least 4 hours) so that the flavors soak in well and the oats can swell.

  4. Garnish the overnight oats with almonds and pumpkin seeds.

Notes

Optional: raisins for garnish!
