Simple sushi bowl with carrot and edamame
This sushi bowl recipe is super quick, yet still wonderfully flavourful and colorful! The taste of sushi, without the effort!

Ingredients

200 gsushi rice or for example wholegrain or black rice

2 tspsushi vinegar or neutral vinegar or lime juice

1avocado in slices

1winter carrot cut into thin ribbons

1/2cucumber in thin half slices

150 gshelled edamame (soybeans) from the freezer, or fresh

sesame seeds optional
-
200 gsweetcorn canned
for the wasabi mayonnaise dressing

1 tbspsoy sauce
-
2 tbsp(plant-based) mayonnaise

1 tspwasabi optional
Instructions

Prepare the rice according to the instructions on the packaging. Add the sushi rice vinegar and season with a little salt if desired. Let cool.

Make the dressing by mixing all the ingredients. Do not like spicy food? Then leave out the wasabi.

Assemble the sushi bowls by dividing the rice over two plates. Distribute the avocado, winter carrot, cucumber, edamame and sweetcorn over the rice and sprinkle the sesame seeds over it. Serve the wasabi mayonnaise alongside.
Notes
Tip: furikake (rice seasoning) is a really tasty addition to the rice! It’s a mix of shredded seaweed and sesame seeds. You can find it at the Asian supermarket or at organic supermarkets. You can also shred a sheet of nori yourself, for a similar flavor!Â
