Ingredients

    soba noodles
  • 1 tbsp
    sesame oil
  • 1
    onion thinly sliced
  • 1 clove(s)
    garlic crushed and finely chopped
  • 1/4
    red chili pepper thinly sliced

    shiitake mushrooms stems removed and thinly sliced
  • 1
    small carrot(s) julienned
  • 1
    Chinese cabbage separate white and green parts
  • 5
    spring onions finely chopped, both white and green parts

For the teriyaki sauce

  • 2 tbsp
    ginger juice
  • 2 1/2 tbsp
    rice syrup
  • 5 tbsp
    soy sauce shoyu
  • 6 tbsp
    apple juice not too sweet, slightly tart
  • 2 tbsp
    sesame oil
  • 1/2 tbsp
    rice vinegar

Instructions

Cook the soba noodles:

  1. Bring a large pot of water to a boil and cook the soba noodles according to package instructions. Once cooked, rinse them thoroughly under cold water to prevent sticking.

Prepare the teriyaki sauce:

  1. In a bowl, mix together all the ingredients for the teriyaki sauce until well combined.

Stir-fry the vegetables:

  1. Heat sesame oil in a large pan or wok over medium heat. Add onion, garlic, and red chili pepper. Sprinkle with a pinch of salt to help release moisture from the onion and prevent burning.

  2. Add shiitake mushrooms, carrot, and the white parts of the Chinese cabbage. Stir-fry for about 3 minutes. If needed, add a splash of water to prevent sticking.

Combine and serve:

  1. Add the cooked soba noodles to the vegetables in the pan, followed by the green parts of the Chinese cabbage.

  2. Pour the teriyaki sauce over the noodles and vegetables. Cover the pan with a lid and let it steam for 2 minutes.

  3. Remove the lid and stir in the spring onions. Mix everything well to coat the noodles and vegetables with the sauce.

Serve:

  1. Divide the yakisoba into serving plates or bowls.

  2. Optionally, garnish with some extra sliced spring onions or sesame seeds.
