Yakisoba

Ingredients

150 gsoba noodles

1 tbspsesame oil

1onion thinly sliced

1 clove(s)garlic crushed and finely chopped

1/4red chili pepper thinly sliced

10shiitake mushrooms stems removed and thinly sliced

1small carrot(s) julienned
-
1Chinese cabbage separate white and green parts

5spring onions finely chopped, both white and green parts
For the teriyaki sauce
-
2 tbspginger juice
-
2 1/2 tbsprice syrup
-
5 tbspsoy sauce shoyu
-
6 tbspapple juice not too sweet, slightly tart

2 tbspsesame oil
-
1/2 tbsprice vinegar
Instructions
Cook the soba noodles:

Bring a large pot of water to a boil and cook the soba noodles according to package instructions. Once cooked, rinse them thoroughly under cold water to prevent sticking.
Prepare the teriyaki sauce:

In a bowl, mix together all the ingredients for the teriyaki sauce until well combined.
Stir-fry the vegetables:

Heat sesame oil in a large pan or wok over medium heat. Add onion, garlic, and red chili pepper. Sprinkle with a pinch of salt to help release moisture from the onion and prevent burning.

Add shiitake mushrooms, carrot, and the white parts of the Chinese cabbage. Stir-fry for about 3 minutes. If needed, add a splash of water to prevent sticking.
Combine and serve:

Add the cooked soba noodles to the vegetables in the pan, followed by the green parts of the Chinese cabbage.

Pour the teriyaki sauce over the noodles and vegetables. Cover the pan with a lid and let it steam for 2 minutes.

Remove the lid and stir in the spring onions. Mix everything well to coat the noodles and vegetables with the sauce.
Serve:

Divide the yakisoba into serving plates or bowls.

Optionally, garnish with some extra sliced spring onions or sesame seeds.
