Caprese salad

Almost everyone knows this classic Italian Caprese salad. Even if you eat plant-based you can still make it, because you can find plant-based mozzarella in various supermarkets and health-food shops!

Ingredients

Servings: 4
  • 1 ball
    (plant-based) mozzarella cut into slices
  • tomatoes cut into slices
  • handful
    basil roughly chopped
  • 2 tbsp
    extra virgin olive oil
  • 1 tbsp
    balsamic vinegar or crema optional
  • salt and pepper

Instructions

  1. Lay the slices of mozzarella and tomato on a plate, alternating between them. You can do this in a circle, or in a row. Sprinkle the basil leaves, olive oil and the balsamic if desired over this and finish it off with salt and pepper.
