Cashew herb cheese

The possibilities are endless! You can eat this cashew herb cheese as a spread on bread, but also as a dip for drinks and nibbles. This deliciously creamy cashew herb cheese is easy to make yourself, from ingredients you can simply find at the supermarket.

Ingredients

Servings: 10
  • 150 g
    unsalted cashew nuts
  • 15 g
    chives, dill, parsley or basil
  • 3 tbsp
    nutritional yeast flakes optional
  • 1
    garlic clove
  • 1/2
    lemon juiced
  • 100 ml
    water
  • salt and pepper to taste

Instructions

  1. Let the cashew nuts soak in water for at least 4 hours (or preferably overnight).

  2. Pour away the soaking water, rinse the nuts well. Blend the nuts together with the fresh herbs, nutritional yeast flakes, garlic and the lemon juice in a blender or a food processor. During blending, add the water bit by bit, until you have a creamy, smooth mass. Stop adding water when it has reached te desired consistency.

  3. Put the 'cream cheese' in a dish or jar and let it set briefly in the fridge.
