Fluffy pancakes with banana and forest fruit compote

Who does not love pancakes? You can top them in all sorts of ways, but they are also very tasty just as they are. This plant-based recipe is extra delicious thanks to the fried banana and forest-fruit compote.

Ingredients

Servings: 4
  • 300 g
    flour
  • 50 g
    sugar
  • 1 tsp
    cornflour
  • 2 tsp
    baking powder
  • 1 tsp
    salt
  • 400 ml
    soy milk
  • 3 tbsp
    sunflower oil plus extra for frying
  • 150 g
    frozen forest fruits
  • 2
    bananas in slices

Instructions

  1. Mix flour, sugar, baking powder, cornstarch and salt in a spacious bowl. Add plant-based milk and oil and whisk into a smooth batter.

  2. Heat some oil in a spacious frying pan. Ladle some batter in the pan; you may be able to fry several pancakes in one pan at the same time. Fry them for about 3 minutes or until bubbles start forming and then push some slices of banana into each pancake before you turn them over. Then fry for another 3 minutes or until they have turned golden brown.

  3. Meanwhile, make the forest fruit compote by heating the frozen forest fruits in a small saucepan and breaking the fruit with a ladle. Optionally add some sugar to the mixture.

  4. Serve the pancakes with the forest fruit compote and syrup of your choice.
