Mango bean salad

This summery salad with bulgur, mango and fresh herbs is a delicious and healthy meal salad for the summer months. It also works very well as a side dish for a BBQ or picnic! The recipe was specially developed for the lifestyle program Plants for Health.

Ingredients

  • 250 g
    mango fresh or frozen, diced
  • ½
    cucumber in pieces
  • 1
    red bell pepper in pieces
  • 1
    avocado in pieces
  • ½
    red onion finely chopped
  • 20 g
    fresh coriander roughly chopped
  • 20 g
    fresh parsley roughly chopped
  • 2 tsp
    lemon zest
  • 2 tbsp
    lemon juice
  • 120 g
    wholemeal bulgur or quinoa use quinoa for a gluten-free option
  • 200 g
    tinned cannellini beans rinsed and drained
  • 150 g
    lamb’s lettuce
  • 2 tbsp
    olive oil
  • 2 tbsp
    pumpkin seeds

Instructions

  1. Prepare the wholemeal bulgur (or quinoa) as indicated on the packaging. Combine all the ingredients, except the bulgur (or quinoa) and the pumpkin seeds, in a large bowl with the lamb’s lettuce.

  2. Then add the lemon juice and the olive oil. Season with salt and pepper. Serve with the bulgur (or quinoa) and garnish with the pumpkin seeds.
