Pumpkin hummus

Because you can never have too many hummus recipes, we added this autumnal hummus to our repertoire. The roasted pumpkin gives the spread a beautiful color and mild flavor.

Ingredients

Servings: 6
  • 250 g
    pumpkin diced
  • 250 g
    chickpeas drained and rinsed
  • 1
    clove of garlic
  • 1/2 tsp
    cumin
  • 5 g
    parsley finely chopped
  • 1/2
    lemon juice
  • 2 tbsp
    olive oil
  • pepper and salt to taste

Instructions

  1. Preheat the oven to 180 degrees. Distribute the pumpkin over a baking tray, drizzle with some oil, pepper and salt and roast for 25 minutes in a preheated oven.

  2. Put the pumpkin, chickpeas, garlic, cumin and parsley in the food processor and grind coarsely. Set aside some parsley for the garnish if desired. Add lemon juice and grind again. Add as much oil as needed for a smooth puree.

  3. Put the hummus in a deep dish. Season with salt and pepper and garnish with parsley.

Notes

Tip: Instead of pumpkin you can also use sweet potato. A little cinnamon or speculaas spices sprinkled over the top give this hummus a special flavor!
