Marry Me Chicken Pasta

Ingredients

  • 350 g
    pasta e.g. Rigatoni
  • 320 g
    plant-based chicken pieces
  • 250 ml
    plant-based cooking cream
  • 2 tbsp
    Italian herbs
  • 2 tbsp
    tomato purée
  • 1
    red onion diced
  • 4
    garlic cloves crushed
  • 10
    cherry tomatoes
  • 4 tbsp
    sun-dried tomatoes chopped
  • 3 handfuls
    fresh spinach
  • 2 tbsp
    oil from sun-dried tomatoes
  • salt and pepper
  • 5 g
    fresh basil optional
  • plant-based parmesan or nutritional yeast flakes optional

Instructions

  1. Cook the pasta according to package instructions. Reserve a bit of the cooking water before draining, in case you need to thin the sauce later.

  2. Meanwhile, cut the onion into half-moons, dice the cherry tomatoes, and press the garlic.

  3. Heat a frying pan and add 1 tbsp of the sun-dried tomato oil. Sauté the plant-based chicken pieces for a few minutes until golden brown. Add the Italian herbs and fry for another minute. Set aside.

  4. Add the remaining 1 tbsp of oil to the same pan, then add the onion and cook until translucent.

  5. Add the cherry tomatoes, sun-dried tomatoes, and garlic. Sauté for a few more minutes. Stir in the tomato purée and cooking cream. For an extra creamy sauce, you can blend this mixture before continuing.

  6. Let the sauce simmer for a few minutes, then add the cooked chicken pieces and spinach to the pan. Cover with a lid and simmer until the spinach has wilted.

  7. Add the cooked pasta and toss everything together. If needed, use a bit of the reserved pasta water to adjust the sauce consistency. Season with salt and pepper to taste.

  8. Garnish with fresh basil and sprinkle with nutritional yeast or plant-based Parmesan, if using.
