Marry Me Chicken Pasta

Ingredients

350 gpasta e.g. Rigatoni

320 gplant-based chicken pieces

250 mlplant-based cooking cream

2 tbspItalian herbs

2 tbsptomato purée

1red onion diced
-
4garlic cloves crushed

10cherry tomatoes

4 tbspsun-dried tomatoes chopped

3 handfulsfresh spinach

2 tbspoil from sun-dried tomatoes

salt and pepper

5 gfresh basil optional

plant-based parmesan or nutritional yeast flakes optional
Instructions

Cook the pasta according to package instructions. Reserve a bit of the cooking water before draining, in case you need to thin the sauce later.

Meanwhile, cut the onion into half-moons, dice the cherry tomatoes, and press the garlic.

Heat a frying pan and add 1 tbsp of the sun-dried tomato oil. Sauté the plant-based chicken pieces for a few minutes until golden brown. Add the Italian herbs and fry for another minute. Set aside.

Add the remaining 1 tbsp of oil to the same pan, then add the onion and cook until translucent.

Add the cherry tomatoes, sun-dried tomatoes, and garlic. Sauté for a few more minutes. Stir in the tomato purée and cooking cream. For an extra creamy sauce, you can blend this mixture before continuing.

Let the sauce simmer for a few minutes, then add the cooked chicken pieces and spinach to the pan. Cover with a lid and simmer until the spinach has wilted.

Add the cooked pasta and toss everything together. If needed, use a bit of the reserved pasta water to adjust the sauce consistency. Season with salt and pepper to taste.

Garnish with fresh basil and sprinkle with nutritional yeast or plant-based Parmesan, if using.
