Want to try something different from simple boiled potatoes? These potato cakes are delicious and great to serve as a snack at a party or gathering. Feel free to add any extra herbs you like!

Ingredients

Servings: 4
  • 400 g
    potatoes
  • 2
    spring onions chopped
  • 100 g
    corn
  • 30 g
    plant-based margarine
  • 1/4 tsp
    salt
  • 1/4 tsp
    pepper
  • 1 tbsp
    onion powder
  • 1 tbsp
    garlic powder
  • 3 tbsp
    nutritional yeast or plant-based cheese

Instructions

  1. Cook the potatoes until tender, about 20 minutes, and then mash them.

  2. Cut the spring onions into large rings. Add the corn, plant-based margarine, salt, pepper, onion powder, and garlic powder. Optionally, add nutritional yeast or plant-based cheese. Mix everything together.

  3. Divide the potato mixture into a greased muffin tin and bake for 30 minutes at 180°C (350°F). Adjust the time if the potato cakes are done earlier or need a little longer.

  4. Carefully remove the potato cakes from the muffin tin using a fork.

Notes

Tip: you can easily make variations to the basic potato cake recipe. Why not  try adding cooked broccoli, peas, or fried tofu?
