Autumnal pasta with pumpkin and sage

In autumn pumpkins are tastiest, so enjoy them while they are in season! For example in this delicious creamy pumpkin pasta with spinach and sage.

Ingredients

  • 1
    onion finely diced
  • 1
    garlic clove finely chopped
  • 400 g
    pumpkin in small cubes
  • 200 g
    cannellini beans canned, drained and rinsed
  • 5 g
    sage
  • 350 g
    (wholemeal) pasta e.g. rigatoni or fusilli
  • oil
  • 200 g
    spinach optional, roughly chopped
  • 150 ml
    vegetable stock

Instructions

  1. Heat a splash of oil in a sauté pan and sauté the onion until it has become translucent. Then add the garlic and fry for another 2 minutes. Then add the cubes of pumpkin and fry these for 7-8 minutes until it has become done.

  2. Meanwhile, cook the pasta according to the instructions on the packaging.

  3. Heat some oil in a frying pan and fry the sage in it for about 2 minutes, until it becomes fragrant.

  4. Set aside a few cubes of fried pumpkin for the garnish if desired and add the cannellini beans and vegetable stock. Use an immersion blender to blend it into a smooth sauce. Taste and season with salt and pepper.

  5. Add the pasta to the pumpkin sauce and stir well. Then add the spinach if desired and stir through, until it has wilted. Distribute the pasta over the plates and garnish with the remaining cubes of pumpkin and fried sage.
